Process to make Afghani Fateer Pyazi bread
I thought this is a good recipe to make during lockdown, very few ingredients, low effort and tasty result. I have modified the original recipe to suit Indian Tastebuds. And also; compared to original version where they use a lot of butter, this I have used little oil for 2 large breads. Enjoy this paratha, kulcha and bread -all in one – Afghani Fateer Pyazi.

Ingredients and Method Respectively
- Maida / Wheat Flour – 1 cup
- 3/4 cup.
- lukewarm water.
- 1/2 tsp yeast (OR 1 tsp Baking Powder).
- Oil.
- Salt.
- 1/2 tsp sugar
Chopped onion, coriander leaves, green chillies.
- Take 3/4 cup lukewarm water and add 1/2 tsp yeast.
NOTE: If you don’t have Yeast, you can take 1 tsp baking powder.
- Add 1/2 tsp sugar.
- Mix well, keep aside.
- In another bowl, take 1 cup maida (Plain flour), Add some salt.
NOTE: Keep some maida aside for dusting.
- Add 2 tsp oil.
- Add yeast and sugar water into dry ingredient.
- Make a soft dough, close the pan and leave it for 1 hour.
- After 1 hour take out the dough, dust the surface with plain flour
and expand the dough with hands try giving it a round shape. - Keep dusting and after done with hands, use roller pin to further flatten the dough.
- Brush 3 tsp oil on the flattened dough
NOTE: you can use butter instead of oil too.
- Now place chopped onions, onion greens, finely chopped chillies and coriander leave.
- Roll the dough to make a cylindar
depending upon your pan size you may need to cut the dough in half. - Now apply oil on the dough and fold the dough as shown in the video.
- Again use fingers and palms to flatten the dough a little and then place it on warm pan keep flatening it with hands.
- Cook both side of bread on medium flame till it gets brown.
- And then cover the lead and let it cook on slow flame for 12 minutes so that Fateer Pyazi Bread gets cooked from inside; it’s a dense thick bread from inside.
- Enjoy this Afghani Bread with tea or just lust like that without anything.
- You can also apply butter on the top when it’s warm if you like.
- There you go Afghani Fateer Pyazi bread is ready.
