Summer means finding ways to have mangoes in all kind of forms. This Katki Keri is something we grew up having from our childhood days in Ahmedabad. Sometimes when you don’t have enough vegetables in lockdown time or even in Summer when you may not find good vegetables; this kind of instant no-cook option comes super handy- goes well with dal chawal or roti or farsan too.

Method to Prepare Katki Keri Pickle
- Take 2 raw mangoes, chop them small.
- Add chopped onion. Proportion of mango to onion is 2:1 but you may also take half and half too.
- Add 1 tsp salt.
- Add 2 tsp coriander seeds powder.
- Add 1.5 tsp red chili powder.
- Add 1/4th cup jaggery (if it’s in small pieces then it will melt nicely).
- Mix everything and cover the lead of bowl and leave for 15-30 min.
- In few minutes, due to mango’s acidic properties; it will melt jaggery.
- And you will have Katki Keri pickle ready in 15-30 minutes.
- Enjoy with Rice-Dal or Roti or any other side dish.
